Easter Bunny Cake


My kids have decided this year for Easter, they want an Easter Bunny Cake, instead of candy. This works for me, as I am tweeking my baking skills anyway. I love to do the cakes, and learn to do them. I am not all that fancy, or anything. I found a very easy one to make here. I will not be using coconut, as my kids do not like it, but pastel colored sugar sprinkles to cover the bunny. Wish me luck I might need it. The rest of our Easter menu will include HAM. I stressed it, because my husband gave up pork, and red meat for Lent. I am proud of him, I did not think he would be able to do it. He will be rewarded with a thick, fat, juicy Ham for Easter dinner.

History of St Patrick's Day


Do you know the history of St Patrick's Day? I did not know, or remember the real history of the day. Mostly it is just a day for drinking, right? No not at all, view the video below to see. These are my kids dressed in their best green duds, aren't they cute.
Did you know that the traditional meal, is Bacon, and potatoes, and that it is ok to cheat on your Lent promise for just this one day? I will have to see if my husband will be tempted. I do not like corn beef, and cabbage, so we will not be having that. However, I did find a clover cookie cutter, and I am going to make clover muffins for dinner. I hope everyone has a superb St Patrick's Day.

Car Accidents, Observing Lent

It has been a crazy week here. On Monday my sister, who still lives in NY, hit black ice, and wrecked her car. Thank goodness she is ok, sore, and stiff but no major injuries. She is out of work, and without a car but it could be worse. Then today, my husband's boss was going to pick him up for work, so I could keep the car today. On her way here, someone rear ended her, while she was turning onto our street. Her car is damaged, but driveable. She has a goose egg on her head, and some sore muscles, but should be fine. They say these things happen in threes, I really hope that is not true.

Yesterday of course was Ashe Wednesday, and the beginning of Lent. My husband and son, decided that they would observe Lent this year. They attend a non denominational church, and the church does offer services for Ashe Wednesday. So my husband has given up red meat, and pork until Easter, which is the end of Lent. I am not sure my husband can stick with this, but I will definitely be supportive. I think all that red meat, is unhealthy anyways. Maybe we will drop 10 pounds or more, in the next 43 days. My son gave up one of his favorite video games. It will be interesting to see how they each do, with their sacrifices.
