Nutrition and Cooking as an Elective Course Sweet and Sour Chicken

As an elective course, for 9th grade, DJ is taking a very basic Nutrition class.  As part of that class, he is also learning to cook, and wash dishes.  He cooks almost every week night, and is responsible for kitchen clean up on those same nights.  He has basically learned to cook our family favorites, and most common menu items.  We had lots of extra apples, so last month for our 4H meeting he made homemade apple cider, in the slow cooker.  It was a big hit, though most kids still chose the soda over apple cider.  The adults loved it, and we had some for home too.  Then this past week, he made homemade applesauce in the slow cooker.  Super simple and delicious.  It had no sugar added which was good, but I think I like it just a little bit sweeter.  Today we decided to learn to make Sweet and Sour Chicken.  We love it when we eat out, so might as well try it.  Now, any other time I have tried to duplicate Chinese food, it is not successful, so I was kind of not optimistic.  I did not tell him that, lol.  It actually was super easy, and super delicious.  A new favorite here at our house.  The only thing we changed about the recipe was, we served with linguine noodles not rice,  no soy sauce, and accidentally used olive oil instead of regular oil.  That just made it a little less crispy, but no other effect on flavor.  We doubled the sauce, and saved some to use next week with pork.  For the recipe we used, click here.

3rd Annual 4H Bakeoff

Our county 4H holds an annual bake off. This is the third year, they have done it, and the third year we have participated. It is not just for baked goods though. You can make a drink, appetizer, specialty desserts, and gift baskets. I really wanted the kids to do a gift basket, but neither had an interest. DJ knew right away what he wanted to do, homemade apple butter and homemade sweet corn bread. After reading the rules it said it must look Christmas like. How do you make corn bread look Christmas like. So we placed it in the Christmas tin. The apple butter and corn bread are delicious together. Caitlin waited until the last minute to decide. She knew she wanted to do a cake, but couldn't make up her mind for the theme. She finally decided on a Winter Wonderland cake, which to me looks more like Candy Land at Christmas. But, she worked real hard, made it from scratch, except the frosting, and it came out real nice. Now, we get to go see who won and eat all the goodies. YUM!!!!!

Did you know apple butter, has no butter in it?  It is more like a jelly than a butter, but it is so yummy.  DJ did not enjoy peeling and coring all them apples, lol!

Teaching With the Arts

Well I forgot to take pictures, so I apologize. What do you consider to be the Arts? I consider music, cooking, drawing, painting, and writing to all be forms of Art. We use Art to learn a lot. It is my favorite way to teach. DJ especially likes to write. So he gets a lot of writing assignments. For example, right now, he is writing a blog post on becoming a knight. Unfortunately I should have put a word limit on his assignment, because he has been writing it for over a week now. I told him I would have to start doing that, and he was not happy at all. So, what do I do? I know in high school and college he is going to get assignments with word limits. I don't want to squash his creativity, but the assignment was not to write a short story. What would you do?

Caitlin has been learning about Ancient Civilizations, and is currently on China. Today, she got to make dinner, using foods that ancient Chinese may have eaten. Now we tweaked it a little bit, because I wanted everyone to eat. Of course you know rice is a huge staple of the Chinese diet. So, she made a version of fried rice, without too much frying. It had sauteed peppers and onions in it, and it was delicious. Garlic, salt and a little bit of sugar were the flavors she used. Then she made oven fried chicken using french fried onions as the coating. Again, normally I would put the chicken right in the rice, but no one will eat it this way, except me, I love it. I wish I had some baby corn to throw in there as well. To round it out she made a toss salad, which is not really a staple of a Chinese diet, but they do eat a lot of vegetables, mostly steamed. Since we don't eat hardly any fish, we didn't even attempt that. All in all she had a ball, and really thought she was a big girl getting to cut up everything, coat the chicken and run the oven.

Yesterday, for a Science experiment we put bread, an orange, and a apple slice into a ziploc bag and set it out in the sun. It will stay there until next week when we will inspect it. She is doing this to see what molds, fungi or other bacteria will grow. I might have her repeat it in the Winter to see that it takes longer to rot when it is cooler out.
